Roasted Beets

 I know not everyone loves beets, but Korby and I sure do! I have really only seen people roast them in foil, which I am not down with. This is a very simple recipe that produces delicious beets. 

-Scrub beets really well and cut both ends off. No need to take skin off. 
-Cut beets in half and then cut into fairly thick slices. 
-Toss beets with a drizzle of olive oil and sprinkle some good quality salt on them. 
-Lay them on a parchment lined baking sheet. 

Bake at 375 for 40 minutes.
