Shredded Beef

I saw this recipe on Salt River Ranch instagram page. I get meat boxes from various farms in the West, and I usually always get a rump roast in the box. When I saw this recipe, I knew I needed to try it. Recipe is used loosely here, this uses hardly any ingredients! 

Rump Roast
Can of Rotel tomatoes
Jar of Salsa Verde

Add salt to the Rump roast and put in crockpot. Pour the rotel and salsa verde over and cook it on low all day, until it easily shreds with a fork. I started mine around 8 and we ate around 5 and it was fork tender. With this meat, you can make: Shredded tacos, shredded enchiladas, stuffed peppers, nachos, etc. We made tacos with it the first night, and then I will make enchiladas this week. We froze the rest for a quick meal another time.
