Macho Salad

 This recipe came from Kristin Andrus. It is a really great salad! We all loved it! Feel free to make without chicken if you want a meatless meal. 


Salad 

6 cups Romaine/red leaf Lettuce, Chopped

1-½ pound rotisserie chicken, shredded

1 avocado, chopped

1/4 cup goat cheese, crumbled

2 whole large Roma tomatoes, coarsely chopped

½ cup toasted almonds

1 cup corn 

1 cup dates (about 12-14 whole dates, sliced

1 cup cornbread croutons


Vinaigrette

1-1/2 tablespoons Dijon mustard

1/4 cup freshly squeezed lemon juice

1 teaspoon Balsamic Vinegar

2 teaspoons Brown Sugar

½ teaspoons kosher salt

¼ teaspoon freshly ground black pepper

2 cloves garlic, minced

¼ teaspoon dried basil

1/2 teaspoon dried oregano

3/4 cup extra virgin olive oil
