Korean Beef Bowl

This recipe came from Mary from 5 Marys Farm. It is so tasty! I would imagine the high quality beef contributes to the flavor!

Cooked rice
2 lbs ground beef
2 Tablespoons sesame oil
1/2 cup brown sugar
1/2 cup coconut aminos
1/2 teaspoon ground ginger
grated fresh ginger to taste
3 cloves garlic
1-2 heads bok choy
mushrooms (optional)
sesame seeds
sriracha

1. Whisk together sesame oil, brown sugar, coconut aminos, and ginger and a set aside.
2. Add garlic and a little oil to pan and cook until fragrant (about a minute). Add two pounds of ground beef and cook until browned. Drain excess fat if any.
3. Whisk sauce mixture again and pour over ground beef. Stir to coat and then add diced bok choy.
4. Allow to simmer for a couple minutes with a lid to soften the greens. Add mushrooms that were cooked in another pan at this point.
5. Serve immediately over white rice or noodles. Garnish with sesame seeds and sriracha.
