Oatmeal Energy Bites

I do not know where this recipe came from, but i have been making it for years. I love to have something like this in my fridge or freezer for a quick snack. You can completely customize it how you desire, but my boys like them as is, so that is usually what i stick to.



1 c. old fashioned oats, uncooked
2/3 c. coconut flakes
1/2 c. peanut butter
1/4 c. ground flax seed
1/4 c. wheat germ
1/2 c. chocolate chips
1/3 c. honey
1/2 Tbsp. chia seeds
1 tsp. vanilla extract

Stir all of the ingredients together in a bowl until thoroughly mixed. Chill the mixture in the refrigerator for about thirty minutes. Once chilled, roll into 1 inch balls. Store in airtight container and keep refrigerated for up to one week.
