Cream Cheese Pie with Sour Cream Topping

This recipe came from an instagram page that i love. It is a mom that started posting her recipes for her grown daughters to have. She just puts a picture and then writes the recipe below, and they are some of my favorite recipes! This pie is absolutely delish! It tastes a little bit like cheesecake. I know she has said that you can add whatever toppings you like to it, but we just eat it plain. So yummy! The instagram page is: gotorecipes

Gram Cracker Crust:
14 whole gram crackers or 1 cup ground
1/4 Cup sugar
1/4 cup butter, melted

Pre-heat oven to 375 degrees. Grind gram crackers in zip lock with rolling pin or in food processor. Mix together crumbs, sugar, and melted butter. Press firmly into 10" pie plate. Reserve a few crumbs for garnish. Bake for 8 minutes. Cool slightly. Decrease oven to 350 degrees while you mix together the filling.

Cream Cheese Filling:
12 oz cream cheese, room temperature
2 eggs, beaten
3/4 cup sugar
2 teaspoons vanilla
1 teaspoon lemon juice

Sour Cream Topping:
Mix together:
3/4 cup sour cream
3/4 teaspoon vanilla
3 Tablespoons sugar

For the filling, beat cream cheese until smooth. Add remaining filling ingredients. Pour into slightly cooled crust and bake at 350 for 20-25 minutes until just barely set. Remove from oven and spread sour cream topping and extra crust crumbs over top. Bake 5 more minutes. Remove from oven and allow to cool. Chill in the refrigerator for at least 4-5 hours before serving.
