Michelle's Sweet Soy Chicken & Rice



Recipe From: The Family Flavor

Yields 6 servings

1/8 cup soy sauce
1/8 cup granulated sugar

8 boneless, skinless chicken thighs, cut into bite size pieces
1 tablespoon all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon ground pepper

2 tablespoons exta virgin olive oil
1 and 1/2 cupe white rice, cooked according to package directions
1/4 cup chopped green onions
2 tablespoons sesame seeds

In a small bowl, combine soy sauce and sugar and whisk to combine. Set aside.

In a large bowl, combine chicken thighs, flour, salt, and pepper. Toss chicken until all pieces are coated in flour. In a large skillet over medium-high heat, add olive oil. Once oil is heated, add chicken. Saute until chicken is cooked through, about 5 minutes. Give the soy sauce mixture a final whisk and then pour over the chicken. Simmer, stirring often, until sugar is dissolved and mixture is slightly thickened, about 5 minutes.

Spread cooked rice onto a large serving platter. Pour chicken and sauce over the rice and sprinkle green onions and sesame seeds on top.

**Comments: Time: 40 minutes (first time making) - quick and easy!
I used 1 package of skinless, boneless chicken breasts instead of chicken thighs- seemed to be fine
I also doubled my soy sauce mix
I also doubled my flour mix but could have trippled it and it would have dded some extra "breading" to it
*** Note from Becky.....If you quadruple the sauce, make sure you use low sodium soy sauce, otherwise it is way too salty!
