Pan-Seared Filet Mignon


I didn't think it was possible to make a delicious steak on the stove/broiler- but it is. And i can honestly say it's turned out better than my grilled ones ever do! This recipe is from our best bites. 
6-7 ounce filets
1 slice of bacon for each filet (not the thick kind)
kosher or sea salt
freshly cracked black pepper
1 Tbsp olive oil
1 Tbsp butter

Remove filets from fridge and let rest 20-30 minutes at room temp. Preheat oven to 400 degrees. Rinse steaks in cool water and blot dry with paper towels. Wrap a piece of bacon around each steak, trimming if necessary so the ends don't overlap much and secure with a toothpick or bakers twine. Sprinkle each side of steak GENEROUSLY with salt and pepper (i'm not as generous with the pepper). Heat an 8-10 inch oven-safe skillet to medium high heat on the stove top. Add oil and butter and tilt pan until butter is melted. Place steaks in pan and cook, without moving them, about 2 1/2 minutes. Use tongs to gently turn steaks and cook on remaining side for 2 1/2 minutes. Place skillet in oven and cook until internal temp reaches 130 degrees, about 5-8 minutes. *At this point, cut open your  steak to check doneness, because mine were still VERY raw. I had to cook almost 16 minutes to get them medium rare* Don't overcook. This is the easiest way to ruin them! Remove from oven and top with a slice of garlic herb butter and let rest 3  minutes. Inhale immediately. 

Garlic herb butter 
1/2 c real butter, softened (This is for 4-6 steaks)
3/4 tsp minced garlic
1 1/2 Tbsp minced green onion
1 Tbsp minced fresh parsley
2-3 cracks fresh black pepper 

Mix all ingredients together. I didn't have all the ingredients on hand for this, so i just used the butter (about 1/3 of what it calls for), the garlic, dried parsley and pepper. It was still delicious. You can log roll it in wax paper and chill until ready to use- or just make it right before and put a little dollop on the steak. Tastes the same!
