Fresh Alpine Potato Soup





I think i got this recipe from our sisters cafe but i'm not sure. Either way it's a lighter yummy soup!
1Tbsp butter or olive oil
1 c chopped onion
1 clove minced garlic
5 c water
5 cubes chicken bullion (or equivalent- i prefer the sams club pasty chicken bullion that has to be 
     refrigerated)
4 medium potatoes, peeled and sliced
4 carrots, peeled and sliced
2 stalks celery, sliced
1/2 ring polska kielbasa sausage, sliced
1 tsp dried dill weed 
3 Tbsp chopped fresh italian parsley
1/2 tsp pepper

Saute the onion and garlic in butter or olive oil in a 4 quart pot. Then add the water, bullion, vegetables and sausage to onion mixture. Bring to a boil and simmer for 15-20 minutes or until potatoes are tender. Finally, add the dill weed, parsley and pepper. Heat through and serve.
