Broccoli Cheddar Soup



1/4 cup chopped onion
1/2 cup butter 
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cup chicken broth
3 cups milk
2 cups cooked or frozen broccoli
1 cup shredded cheddar cheese

In a saucepan saute onion in butter until tender
Stir in flour, salt and pepper
Cook and stir until mixture boils and thickens
Add broth and milk all at once
Add broccoli and simmer, stirring constantly until heated through
Remove from heat and stir in cheese until melted

Serves 2 -4
