Summer Blueberry Crumble


1/4 cup sugar
4 tsp cornstarch
1/4 tsp salt
5 cups fresh blueberries
2/3 cup flour
1/2 cup old fashioned oats
1/3 cup packed brown sugar
1/2 tsp cinnamon
6 Tbsp chilled, chunked, unsalted butter

Combine sugar, cornstarch and 1/8 tsp of salt in a bowl. Add the berries to dry mixture and coat. Spread in a square dish (I think I usually do an 8x8 or 9x9- i like it thicker- by 9x13 would work also). Mix flour, oats, brown sugar, cinnamon and 1/8 tsp of salt in a bowl. Add chilled butter using a pastry blender (think of the consistency as pea sized butter chunks). Sprinkle over the berries. Bake until filling is bubbling, about 30 minutes. Check to make sure it's warmed through. Cool for 30 minutes and serve with vanilla ice cream.
