Soft Ginger Cookies



These are the only ginger cookies I will eat. If they aren't soft- they aren't my kind of cookie. Your house smells delicious when you make these too! 
3/4 cup butter or shortening (or half of each or use butter flavored Crisco- really its all the same)
1 cup sugar
1 egg
1/4 cup molasses
2 c flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ground ginger
1/2 tsp salt

Mix butter (shortening) and sugar. Add the egg and molasses and blend well. Mix the dry ingredients together in a separate bowl and add to molasses mixture. Blend well and chill for one hour or freeze for 10 minutes. Roll into 1" balls and roll in sugar. Place on greased cookie sheet and bake 8-10 minutes at 375. DO NOT OVERBAKE! Let cool before removing from cookie sheet.
*If you have extra time, I had them half dipped in white chocolate and they were so good!
