Spanish Rice

The recipe is actually very simple all you need is the right kind of rice.
Ingredients:
  • 1-1 1/2 c. Long grain rice
  • 1/2 small white onion
  • 3 tomatoes
  • 1/2 tsp. Garlic powder
  • 1 tbs. Caldo de pollo
  • 1 tbs Canola Oil
Roughly chop tomatoes and onion and blend in blender with 1/2-3/4 cup of water. Strain and set aside. Pulp can go in your compost bin.
In a small frying pan heat oil on medium temperature.
Stir in rice and fry rice until golden brown. Stir constantly or it will burn.
Once rice is golden add tomato and onion mixture. You’ll need to add water to make the liquid two times the amount of rice. I added about 3/4 but it may vary.
Add Caldo de pollo and garlic. Stir and taste. If the flavoring is off add more Caldo de Pollo or salt if you prefer. I like use only the Caldo de pollo.
Bring to a boil. Cover and reduce heat to low. If you have numbers on our stove, I turn mine down to between 2-3.  Rice is done when liquid has evaporated.
