Whole Wheat Bread


4 cups warm water


Add:


3 Tablespoons yeast
1/3 cup canola oil
1/3 cup honey (overflow)
1/3 cup sugar
Let mixture active (get puffy)


Add:


1/4 cup dough enhancer or gluten 
Then add:
4 cup fresh ground whole wheat flour
Mix until smooth and glossy


Add


1 Tablespoon salt


Then add


4-5 cups flour fresh ground whole wheat flour, 1 cup at a time
Mix until dough forms and pulls away from sides of bowl
Mix 5-8 minutes on low 
Pour small amount of oil on counter and place dough and knead into smooth ball. 
Cut in to 4 pieces and form 4 loaves
Place in greased pans
Cover
Let rise until doubled (approximately 30 minutes)
Place loaves in COLD oven
Set temperature to 350°
Set timer for 22 - 27 minutes (should be golden brown)
When done baste top with butter


** When I grind my wheat, I usually add 1 cup of 9 grain.
